Sometimes you just have to wonder how someone came up with the idea of eating certain things. In Mexico, huitlacoche is the name of a fungus that grows on corn. The flavor is often described as “earthy,” which really doesn’t surprise us at all. The same description applies to that moldy piece of bread you accidently made a sandwich with.
