China is well-represented among countries that consume things that we consider unusual, if not revolting. The drunken shrimp is a name that is quite literal since it is prepared by placing live shrimp in a bowl of rice wine. In an exercise somewhat reminiscent of bobbing for apples, diners then use chopsticks to capture the shrimp as they flit around in the bowl. Once captured, the live shrimp is consumed, starting with the head. The alcohol in the wine serves to reduce the agility of the shrimp, making them easier to pluck out.
