While some people are content to douse their pancakes with one of the fake “maple syrup” brands, true connoisseurs demand only real 100 percent maple syrup. Between the labor-intensive efforts required to produce it, and the fact that it takes over 40 gallons of tree sap to make a single gallon of top-quality syrup, you can understand why it demands a high price in the retail market. A small 8-ounce bottle can cost $5 or $6 or more, depending on where it is sold.
